A refreshing way to use the grill, with veggies instead of meats! A healthy alternative for your next game day get together.
Ingredients
- 1/2 cup Balsamic Vinegar
- 6 tbsp olive oil
- 1/4 cup finely chopped parsley
- 1/4 cup finely chopped basil
- 3 minced garlic cloves
- 1 lb sliced zucchini
- 1 pint button mushrooms, sliced in half
- 1 large Red or Yellow bell pepper cut in quarters
- 1 large red onion chopped
- 6 cups baby spinach
Directions
- Mix balsamic vinegar, oil, parsley, basil and garlic. Season with salt and pepper.
- Combine veggies in large plastic bag and add balsamic mixture.
- Marinate for at least 1 hour
- Put all mushrooms on a skewer
- Take vegetables out of balsamic and set it to the side
- Grill veggies for 7 minutes, turning halfway through cooking.
- Let vegetables cool and cut into smaller pieces.
- In small sauce pan, bring balsamic mixture to a boil and let simmer for a couple minutes
- Top grilled vegetables with balsamic dressing from the start of the recipe
