A refreshing way to use the grill, with veggies instead of meats! A healthy alternative for your next game day get together.


  • 1/2 cup Balsamic Vinegar
  • 6 tbsp olive oil
  • 1/4 cup finely chopped parsley
  • 1/4 cup finely chopped basil
  • 3 minced garlic cloves
  • 1 lb sliced zucchini
  • 1 pint button mushrooms, sliced in half
  • 1 large Red or Yellow bell pepper cut in quarters
  • 1 large red onion chopped
  • 6 cups baby spinach


  1. Mix balsamic vinegar, oil, parsley, basil and garlic. Season with salt and pepper.
  2. Combine veggies in large plastic bag and add balsamic mixture.
  3. Marinate for at least 1 hour
  4. Put all mushrooms on a skewer
  5. Take vegetables out of balsamic and set it to the side
  6. Grill veggies for 7 minutes, turning halfway through cooking.
  7. Let vegetables cool and cut into smaller pieces.
  8. In small sauce pan, bring balsamic mixture to a boil and let simmer for a couple minutes
  9. Top grilled vegetables with balsamic dressing from the start of the recipe
