A basic item, but one that everyone will enjoy.  It’s healthy, easy to make, and tasty!


  • 40oz Pineapple chunks
  • 1/2 cup Packed brown sugar
  • 2/3 cup Cider vinegar
  • 1/4 cup Soy sauce
  • 2/3 cup Ketchup
  • 2tsp Ground ginger
  • 1 1/2 tsp Honey
  • 3lbs Round top roast
  • 1/2lb Mushroom caps
  • 1 Small onion
  • 1 Green pepper
  • 5 Red potatoes


  1. Drain pineapple, but save juice
  2. combine juice, brown sugar, cider vinegar, soy sauce, ketchup, ginger, and honey
  3. Pour in large shallow dish
  4. Cut meat into cubes, and add to mixture
  5. Cover and marinate in refrigerator for at least 12 hours
  6. Drain meat but keep marinade
  7. Bring marinade to boil in saucepan
  8. Add mushrooms, reduce heat and simmer uncovered for 10 mins
  9. Drain, save marinade
  10. Use skewers and alternate meat, pineapple, mushrooms, onions, green peppers and potatoes
  11. Grill for 10-15 minutes while continuing to baste with marinade or BBQ sauce until well coated
