A delicious and easy way to cook a chicken at your next tailgate! Cooks evenly while propped up on the beer can, which also allows flavors to seep into the chicken.

Ingredients

  • 1 Whole chicken (about 5lbs)
  • 1 Beer can (try using a taller can)
  • 2tbsp Brown sugar
  • 1 2/3 tsp Salt
  • 1 1/2 tsp Pepper
  • 1 tsp Paptrika
  • 1 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/8 tsp Chipotle chili powder
  • 2tbsp Unsalted room temp butter
  • 3 tbsp Olive oil
  • 2 Limes

Directions

  1. Preheat the oven to 425 degrees.
  2. Place a baking dish on a baking sheet.
  3. Open the can of beer and pour about 1/4 of it into the dish or pan. Set the can in the center of the dish.
  4. Remove the giblets.
  5. In bowl, stir together the sugar, salt, pepper, paprika, garlic powder, onion powder and chili powder.
  6. In another bowl, add the softened butter. Add a few pinches of the spice mix to the butter and stir together until combined and smooth.
  7. Gently lift the skin of the chicken and rub the butter all over the breasts, making sure to get under the skin, and the thighs
  8. Slice limes and slide them up underneath the skin
  9. Gently place chicken on top of the can of beer so it appears to be sitting.
  10. Rub the outsides with olive oil.
  11. Slice the other lime in half and place it face down in the top part of the cavity of the chicken, where the neck would be.
  12. Roast the chicken for about an hour and 15 minutes.
  13. Let chicken rest for 30 minutes after cooking
  14. Gently remove chicken from can, but use plenty of force because it might get stuck!
