Caprese salad sliders, a fresh and light snack for those not into heavy tailgate dishes

Ingredients

  • 15 Hawaiian slider rolls
  • 16oz Mozzarella cheese
  • 4-5 tomatoes, sliced into 15 slices
  • 15-20 basil leaves
  • 1/4 cup pesto
  • 1/4 cup butter, melted
  • 2tbsp grated Parmesan cheese
  • 1/2tsp poppy seeds
  • 1/4tsp salt
  • 1/4tsp ground black pepper

Directions

  1. Preheat oven to 350
  2. Spray large baking sheet with nonstick spray
  3. Place bottom halves of rolls into dish
  4. Add pesto and spread onto rolls
  5. Add slice of mozzarella cheese on each roll, then add a slice of tomato and basil leaves
  6. Place tops of roll onto sandwich
  7. Combine melted butter, Parmesan cheese, salt, pepper and poppy seeds
  8. Whisk until well combined
  9. Drizzle this mix over top of sandwiches
  10. Cover baking dish with foil and place into oven
  11. Cook for 10 minutes, remove foil then cook for another 3-5 minutes or until golden brown and melty cheese
