Scoop this Mexican-style dip onto chips, bread, or anything else you’d like!  It’s a welcome and needed addition to the standard salsas & dips you see at most tailgates.  Get ready to tell everyone what it is!

Ingredients

  • 1/2 cup olive oil
  • 1/3 cup sugar
  • 1/3 cup white wine vinegar
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 lb tomatoes
  • 15 oz black-eyed peas rinsed and drained
  • 15 oz can black beans, rinsed and drained
  • 11 oz can sweet corn, drained
  • 1 diced red onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1 cup chopped cilantro

Directions

  1. Whisk together olive oil, sugar, white wine vinegar, chili powder, and salt
  2. Add tomatoes, black-eyed peas, beans, corn, red onion, and bell peppers
  3. Stir until combined
  4. Add cilantro
  5. Cover mix and chill for at least 1 hour
  6. Serve chilled
