  • 1 White onion thinly sliced
  • 2 1/2lbs Boneless skinless chicken breast
  • 2tsp Italian seasoning
  • 1tsp Garlic pepper
  • 16oz Jar pepper rings, drained
  • 16oz Roasted bell pepper strips
  • 1 Cup chicken broth
  • 1/4 cup Mild pepper brine
  • 8 Hoagie rolls
  • 8 Slices provolone cheese


  1. Place onions over bottom of slow cooker and place chicken on top of onions
  2. Sprinkle Italian seasoning and garlic pepper
  3. Spread drained pepper rings and pepper strips over chicken
  4. Pour chicken broth and 1/4 cup of brine from pepper rings around chicken
  5. Place cover on crock pot and cook on low for 7 hours or high for 5 hours
  6. Cook until chicken is tender and shreddable
  7. Move cooked chicken to cutting board and shred
  8. Place back into slow cooker and stir into cooking liquid
  9. Combine with peppers and onions
  10. Spread mix onto hoagie rolls and top with cheese
  11. Place under broiler until cheese melts
