A twist on the classic BBQ ribs recipe, with a hint of garlic and ginger, making it a great recipe for the next tailgate.

Ingredients

  • 4lbs ribs
  • 6 chopped garlic cloves
  • 1 piece chopped fresh ginger
  • 1 tbsp sugar
  • 1 tbsp salt
  • 1 tbsp sugar
  • 2 tbsp pepper
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp asian fish sauce

For the sauce

  • 4 tbsp salt
  • 4 tbsp pepper
  • 4 limes, cut in halves

Directions

  1. Cut the rib racks in half.
  2. Create a paste with the spices.
  3. Place ribs in a baking dish or tray.
  4. Pound garlic, ginger, sugar, 1tbsp salt and black pepper with a mortar. Slowly add honey, soy sauce and fish sauce.
  5. Spread paste over ribs on both sides and let marinate in fridge between 2-4 hours.
  6. Prepare sauce ingredients by placing 1tsp salt and 1tsp white pepper by 4 bowls for dipping sauce and place limes next to each bowl.
  7. Prepare grill by setting to medium temp.
  8. Place ribs onto grill and cook until golden brown.
  9. Remove ribs from heat once fully cooked and cut into individual ribs. Squeeze lime juice into bowls of salt and white pepper and stir until mixed,
  10. Glaze ribs with the mixture.
  11. Serve to guests and watch their eyes glaze over
