Everyone loves a good corn dog! These little mini corn dog muffins are perfect for a tailgate, and easy for guests to nibble on while enjoying the game.

Ingredients

  • 1/2 cup melted butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 tsp baking soda
  • 1 cup cornmeal
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 9 hotdogs

Directions

  1. Mix butter and sugar
  2. Add the eggs
  3. Add buttermilk and stir until ingredients are well combined
  4. In a separate bowl combine baking soda, cornmeal, flour, and salt and stir
  5. Whisk together both bowls, combining mixes into one bowl
  6. Use a mini muffin tin and spray with Pam or other sort of grease spray
  7. Pour the batter into muffin tins and place 1 cut up piece of hotdog in center of each muffin tin
  8. Bake for 10 minutes at 375
