Everyone loves a good corn dog! These little mini corn dog muffins are perfect for a tailgate, and easy for guests to nibble on while enjoying the game.
Ingredients
- 1/2 cup melted butter
- 1/2 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1/2 tsp baking soda
- 1 cup cornmeal
- 1 cup all purpose flour
- 1/2 tsp salt
- 9 hotdogs
Directions
- Mix butter and sugar
- Add the eggs
- Add buttermilk and stir until ingredients are well combined
- In a separate bowl combine baking soda, cornmeal, flour, and salt and stir
- Whisk together both bowls, combining mixes into one bowl
- Use a mini muffin tin and spray with Pam or other sort of grease spray
- Pour the batter into muffin tins and place 1 cut up piece of hotdog in center of each muffin tin
- Bake for 10 minutes at 375
