Perfect lunch or appetizer, especially for bigger crowds. A cold sandwich perfect on a hot day! Make sure to keep them cold before you serve! A yummy and easy recipe.


  • 2 cups basil leaves
  • 3 cloves garlic
  • 1/2 cup grated Parmesan
  • 1/3 cup olive oil
  • 1/4 cup walnuts
  • 2 loaves focaccia bread
  • 1lb deli sliced chicken breast
  • 1/2lb deli sliced salami
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup sliced olives
  • 1/4 cup pepperocinis
  • 2 roasted red bell peppers chopped
  • 16oz fresh mozzarella sliced


  1. Combine basil, garlic, parmesan, olive oil and walnuts in food processor or blender
  2. Blend until smooth
  3. Cut focaccia loaves in half and spread mix on top half of bread
  4. On bottom halves add chicken breast and salami
  5. Mix sun-dried tomatoes, olives, pepperoncinis and red bell peppers in small bowl
  6. Sprinkle over meat
  7. Top with mozzarella and cover sandwich
  8. Wrap tightly in plastic wrap
  9. Place wrapped sandwich on baking sheet and place another baking sheet on top of sandwiches
  10. Place 2 heavy objects like books on top of baking sheets to press sandwich
  11. Place in fridge for at least 12 hours
  12. Unwrap sandwiches and slice into squares
