Perfect lunch or appetizer, especially for bigger crowds. A cold sandwich perfect on a hot day! Make sure to keep them cold before you serve! A yummy and easy recipe.
Ingredients
- 2 cups basil leaves
- 3 cloves garlic
- 1/2 cup grated Parmesan
- 1/3 cup olive oil
- 1/4 cup walnuts
- 2 loaves focaccia bread
- 1lb deli sliced chicken breast
- 1/2lb deli sliced salami
- 1/4 cup sun-dried tomatoes
- 1/4 cup sliced olives
- 1/4 cup pepperocinis
- 2 roasted red bell peppers chopped
- 16oz fresh mozzarella sliced
Directions
- Combine basil, garlic, parmesan, olive oil and walnuts in food processor or blender
- Blend until smooth
- Cut focaccia loaves in half and spread mix on top half of bread
- On bottom halves add chicken breast and salami
- Mix sun-dried tomatoes, olives, pepperoncinis and red bell peppers in small bowl
- Sprinkle over meat
- Top with mozzarella and cover sandwich
- Wrap tightly in plastic wrap
- Place wrapped sandwich on baking sheet and place another baking sheet on top of sandwiches
- Place 2 heavy objects like books on top of baking sheets to press sandwich
- Place in fridge for at least 12 hours
- Unwrap sandwiches and slice into squares
