For those who rise early for their tailgate on game day, here’s a delicious breakfast sandwich to prepare for you and your guests! A great way to use the grill and a yummy sandwich everyone should be sure to enjoy!


  • 8 Eggs
  • 1/2 cup milk
  • 1/8tsp Salt
  • 1/8tsp Ground black pepper
  • 8 English muffins toasted
  • 1/2 cup bottle Thousand Island salad dressing
  • 1/2 cup bottle Thousand Island salad dressing
  • 8oz Thinly sliced corned beef
  • 8oz Swiss cheese, thinly sliced


  1. 24 hours before serving: preheat oven to 350 and coat a 13x9x2-inch baking sheet and spray with cooking spray
  2. Whisk together eggs, milk, salt and pepper until combined
  3. Pout into prepared baking sheet and bake for 10 mins or until egg mixture is cooked
  4. Remove from oven and let cool
  5. Cut into eight rectangles
  6. Assemble sandwiches by spreading out muffins and coating with Thousand Island salad dressing and placing egg rectangles on bottom half
  7. Top with sauerkraut, corned beef, and cheese
  8. Add top half of muffin and wrap each sandwich in foil and chill overnight
  9. On Day of Tailgate: prepare grill
  10. Place sandwiches in foil onto grill and cover and heat for 15 to 20 minutes
  11. Turn half way through grilling
